Quiche

 

1 cup steamed silverbeet

8 eggs
1½ cups of milk
1 tsp mustard
2 tsp minced garlic
1 tsp salt

1 sliced tomato
½ onion grated
2 - 3 medium potatoes, cooked (approx 2 cups)

1 small cup self-raising flour

diced ham or salmon

1½ large cup grated tasty cheese

 

Chop and steam the silverbeet.  Put the eggs, milk, mustard, garlic, salt and onion into large bowl.  Beat together then add self-raising flour.  Beat until smooth. Add 1 large cup grated tasty cheese, diced ham or salmon.

Pour half of the mixture into a well greased baking dish and top with the potatoes and silverbeet, then add the rest of the mixture.

 Top with the extra grated cheese and sliced tomato.

 Bake for one hour at 150°C.
