Banana Cake

 

125g butter 

2 eggs

1 cup sugar

1 cup (2-3 mashed) bananas

2 cups flour

1 tsp baking soda

1 tsp baking powder

                       

Beat together butter and sugar until light and fluffy.

Add eggs one at a time, mix thoroughly after each egg.

Add mashed bananas and mix well.  Add sifted dry ingredients and mix well, but do not over mix.

Spoon into 21cm cake tin that has been well greased and lined on the bottom with greaseproof paper.

Bake in pre-heated oven at 180° C for 40 – 50 minutes.

Ice with cream cheese icing.
 

 

 

 

 

 

Cream Cheese Icing

 

2 cups icing sugar                      1/2 cup cream cheese

2 tbspn butter (softened)           1 lemon rind grated

 

Beat all ingredients together until smooth.

 

Makes enough to ice one cake.
